Chinois
Similar to shepherd’s pie, this French-Canadian dish features layers of ground beef, corn, and mashed potatoes. Despite the “Chinois” in its name (in French, pate Chinois means “Chinese pie”), it’s not Chinese. The dish probably gets its name from two towns in Maine (China and South China), where men from Quebec went to work in forestry camps around 1900. Cooks at the camps probably served it, and the men brought the dish back to Quebec.
